Rainbow Food

I will probably be talking about this in a lot more detail in a couple of weeks, but lately we've been taking some "baby steps" toward eating more healthfully.

Here are today's efforts:

Our healthy snack - Apple, red grapes, green grapes, banana and cheese stick.


Dinner - I really thought I'd taken some photos of a whole plate, but now I can't seem to find them on my phone. Hmmm. Ate any rate, here are most of the ingredients of "Rainbow Rice," which is rice (duh), cooked in a bit of butter and olive oil with red bell pepper, orange carrot, yellow bell pepper, green peas and purple onion.

We also had some "matchstick" carrots, spinach salad and (packaged, frozen) Italian-style meatballs.

    Love your Rainbow Rice!!! Did you all like it? I'd be up for some...well except for the cooked peas lol...still not loving those :)

    We LOVED the rainbow rice. Well, Shrike and I loved it, and Peeper took a teeny bite.

    Give it a try, neither Shrike nor I likes peas! They were her childhood nemesis. When she saw the split-open ones, she thought they were little mouths, and going to bite the insides of her cheeks.

    (Note that we are old enough that this was pre-PacMan. She came up with that all on her own.)

    In this recipe, they sort of blend in with everything else. You don't really taste them, and there are other things to bite down on, so you don't notice that, either.

    (I don't really like how they "pop" when you bit them. I have the same issue with corn, although I'm learning to be okay with its flavor.)
