It's Thanksgiving Eve, so that means pie, and Peeper helped, just like last year.

Well, maybe not just like last year.

First, she just hung out and played while I worked on the pie. (Notice the hands-free stance here!)

She really got a kick out of the blender noise!

Then she came over to inspect my work.

When we were done, she licked the spoon spatula.

Which is something of a tradition in and of itself.

If you're new around these parts, here's the recipe for Lemon Icebox Cheesecake.

  1. Oh the joys of being one; it's so much more fun than being none!

  2. Where's the recipe? Our traditional "cheese cake" is way to good to not share the recipe!
Be sure and mention where you got the recipe.

  3. At the very bottom of the post is a link to the recipe, which I posted a couple of years ago.

Didn't it come from a fundraiser cookbook from the school district or PTA or something like that?

I've simplified it a bit, even beyond the changed you made. I just use cream cheese, Eagle brand and lemon juice.

  4. It was from a Food Services organization fundraiser recipe book. The original had almond extract. I switched to vanilla. The original also call for a topping of cherry pie filling, but we never used that. It is VERY good. You forgot to mention the graham cracker crust.

We won't fix it this year, I am afraid.

What say you?
