Beet Chips

We first tried these last week, along with a whole rainbow of veggies, and when I posted photos on Facebook, Kia (the Rainbow Mom) asked me to do a guest post for her blog with the recipe. That will be running on Monday, but here's a sneak preview of Peeper eating some more beet chips today. 

Actually, she wasn't so thrilled with this one, because it was "Not so very crispy."
