Egg Salad
Shrike and Peeper dyed some Easter eggs at art class today, and I wasted no time in smashing them up to eat.
I just added some mayo and (almost) a rainbow of veggies: red and yellow bell peppers, carrots and purple onion; I forgot the green.
Shrike declared it "the best egg salad she's ever eaten."
We ate it on Aldi brand not-Ritz crackers, with some teeny carrots and apple.
Peeper ate a bite of each, plus a few crackers, and Shrike and I gobbled it up.
