Chicken and Black Bean Enchilada Casserole

1 small onion, chopped
1 can chicken, drained
1 can black beans, drained
1 can cream of chicken soup
Garlic, cumin and chili powder, to taste
3 large flour tortillas
Shredded cheese - some sort of Mexican flavor
1 small can sliced black olives, drained

Saute onions in olive oil.



Add canned chicken . . .


. . . black beans, cream of chicken soup and spices.


 You'll need to keep the kid entertained while you're working. This is effective.


So is this.


Layer tortilla, chicken mixture and cheese in a well-oiled 9" x 9" baking dish, repeating until dish is full. (I got three repeats.) Top with more cheese and olives. A toddler comes in handy for throwing on the cheese.


Bake at 400 degrees for about 15 minutes, until all melty and yummy looking.
